Tabouleh (Middle Eastern Salad)

An easy low-carb side dish with a Mediterranean flair. Our version of tabouleh with crispy cauliflower rice makes is super fresh and nutritious.

Serves 2

INGREDIENTS
  • 55 grams fresh parsley
  • 14 grams fresh mint
  • 28 grams shallots
  • 1  medium tomato
  • 1/2 cup raw cauliflower rice
  • 1 tablespoon MCT oil (or olive oil)
  • 1/4 lemon, juice
  • salt and ground black pepper

METHOD

Finely chop the parsley, mint, and shallots. Dice the tomatoes. Shred the cauliflower if need. Add all the ingredients to a bowl with lemon juice and MCT oil. Mix and serve.
