An easy low-carb side dish with a Mediterranean flair. Our version of tabouleh with crispy cauliflower rice makes is super fresh and nutritious.
Serves 2
INGREDIENTS- 55 grams fresh parsley
- 14 grams fresh mint
- 28 grams shallots
- 1 medium tomato
- 1/2 cup raw cauliflower rice
- 1 tablespoon MCT oil (or olive oil)
- 1/4 lemon, juice
- salt and ground black pepper
METHOD
Finely chop the parsley, mint, and shallots. Dice the tomatoes. Shred the cauliflower if need. Add all the ingredients to a bowl with lemon juice and MCT oil. Mix and serve.
