ZUCCHINI BOATS

Perfect for the whole family.  For the Slim Down or Shake Loss Programs, add in healthy fats such as olive oil, cheddar cheese or sour cream.

SERVES 4 (Single serve 2 boats: one protein, one vegetable).

These Zucchini Boats stuffed with ground beef bolognese sauce and cheddar cheese are a delicious low-carb dish that goes well as a meal or side.

INGREDIENTS

  • 4 medium Zucchini
  • 1 ½ cups of Beef Bolognese (see SLIMTOX recipe)
  • 1 teaspoon of Parsley, chopped

METHOD

Preheat oven to 200°C. Slice the zucchinis in half longways and scoop out the seeds in the centre, making a canoe-like shape. Place the zucchini halves onto a lined roasting tray or baking sheet. Spoon the Beef Bolognese Sauce into the zucchini canoes, evenly sharing the mixture between the 8 halves. Top the Bolognese with nutritional yeast (optional).

Bake the zucchini boats in the oven for 15-20 minutes.

Sprinkle with parsley and serve.
